  • 4 chicken fillets
  • 1 shallot
  • 4 garlic cloves
  • 1 can cherry tomatoes (14 oz)
  • 2 mozzarella balls
  • Fresh basil
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • ½ cup chicken broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp dried basil
  • 2 tbsp tomato paste

Instructions

  1. Preheat your oven to 200 °C (400 °F). Season chicken fillets with salt, black pepper, garlic powder, and paprika.
  2. Heat olive oil and butter in a cast iron skillet over medium-high heat. Cook chicken for about 5 minutes on each side until browned and cooked through. Remove and keep warm.
  3. In the same skillet, sauté minced garlic and chopped shallot until fragrant. Deglaze with apple vinegar, adding salt, pepper, dried basil, and tomato paste. Stir for one minute.
  4. Add chicken broth and cherry tomatoes; bring to a boil then simmer for 5 minutes.
  5. Nestle chicken back in the sauce, top with chopped basil and mozzarella. Simmer for another 5 minutes until melted.
