2 boneless, skinless chicken breasts, cut into bite-sized pieces
12 oz rigatoni pasta
2 tbsp olive oil
4 tbsp butter
5 cloves garlic, minced
2 cups baby spinach
1½ cups heavy cream
8 oz cream cheese, softened and cubed
1¼ cups grated Parmesan cheese
1 cup shredded mozzarella cheese
½ tsp garlic powder
½ tsp onion powder
Salt and black pepper, to taste
¼ cup reserved pasta water (as needed)
Chopped fresh parsley (for garnish)
Instructions
Boil pasta in generously salted water until al dente. Reserve ¼ cup of the pasta water, then drain and set aside.
Season chicken with salt, pepper, garlic powder, and onion powder. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Cook chicken until golden brown and fully cooked (about 6–7 minutes). Remove from skillet and set aside.
In the same skillet, reduce heat to medium. Add remaining butter and minced garlic. Sauté until fragrant (about 30 seconds). Toss in spinach and cook until just wilted.
Pour in heavy cream and stir in cream cheese until smooth. Add Parmesan and mozzarella while stirring constantly until the sauce thickens. Adjust with reserved pasta water as needed for consistency.
Add cooked rigatoni and chicken into the sauce. Stir until everything is well-coated in the creamy mixture.
