  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes, seasoning with salt, pepper, and Italian seasoning. Cook until browned and cooked through (6-8 minutes). Remove from skillet.
  2. In the same skillet, melt butter. Sauté minced garlic and chopped onion until fragrant (3-4 minutes).
  3. Stir in broccoli florets; cook until bright green and tender-crisp (about 5 minutes).
  4. Add spinach; cook until wilted (2-3 minutes).
  5. Pour in chicken broth and heavy cream; bring to a simmer while stirring. Stir in Parmesan cheese until melted.
  6. Return the chicken to the skillet; stir to coat everything in the sauce.
  7. Serve hot over rice or pasta.
