  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)

Instructions

  1. In a Dutch oven or large pot, heat olive oil over medium-high heat. Sauté the chopped onion until translucent (about 5 minutes).
  2. Add ground turkey and cook until browned, breaking it up as it cooks for about 5 minutes.
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper until evenly combined.
  4. Mix in drained kidney beans, diced tomatoes (with juices), and chicken broth (or water). Bring to a gentle boil.
  5. Reduce heat and let simmer for 15-20 minutes with the lid slightly ajar, stirring occasionally.
  6. Season with salt and pepper to taste before serving hot with your choice of toppings.
