  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg
  • 2 tsp butter vanilla emulsion
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix
  • 1/2 cup milk
  • 4 oz Cool Whip
  • 1 medium banana, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together butter, oil, granulated sugar, and powdered sugar using an electric mixer.
  3. Add the egg and butter vanilla emulsion; mix well.
  4. In another bowl, whisk flour, salt, and baking powder together. Gradually add dry ingredients to the wet mixture until combined.
  5. Scoop dough onto a lined baking sheet; leave space between cookies.
  6. Bake for about 8 minutes until edges are lightly golden.
  7. For the topping, whisk together pudding mix and milk until smooth, then fold in Cool Whip.
  8. Once cookies cool completely, top each cookie with the pudding mixture and garnish with chopped bananas and Nilla wafers.
