  • 1 lb steak (sirloin or ribeye), sliced into strips
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 20 oz cheese tortellini (refrigerated or frozen)
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup Velveeta, cubed
  • 1/4 cup grated Parmesan
  • 1/2 tsp garlic powder
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the tortellini according to package directions; drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil and sear steak seasoned with Cajun seasoning and smoked paprika for 2–3 minutes per side. Remove from skillet.
  3. Lower heat, melt butter in the same skillet, add minced garlic, and sauté until fragrant.
  4. Stir in heavy cream and milk, warming through before adding cheeses. Mix until melted and smooth.
  5. Combine cooked tortellini with the sauce and return the steak to the skillet; stir gently to coat.
