Creamy Turkey Bacon Ranch Potato Salad is a delightful twist on the classic potato salad, combining tender potatoes, savory turkey bacon, and zesty ranch dressing for a dish that’s perfect for any occasion.

  • 2 1/2 lbs. small red potatoes
  • 1 lb. finely chopped turkey
  • 2 cups ranch dressing
  • 1/2 cup shredded cheddar cheese
  • Scallions (for garnish)

Instructions

  1. Cut the red potatoes into quarters and place them in a large pot with enough water to cover them. Add salt and bring to a boil. Cook uncovered for 12-15 minutes until tender, then drain and cool under cold water.
  2. In a skillet over medium heat, cook the chopped turkey until crispy. Remove from heat and set aside.
  3. In a large mixing bowl, combine the cooled potatoes, ranch dressing, cooked turkey, and cheddar cheese. Mix gently until well combined.
  4. Cover the bowl and refrigerate for at least one hour before serving to let flavors meld. Garnish with additional turkey and scallions before serving.
