  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds. Drizzle with olive oil, season with salt and pepper, then roast cut-side down on a baking sheet for 30-35 minutes until tender.
  3. In a skillet over medium heat, sauté diced onion until translucent. Add garlic and mushrooms; cook until browned. Stir in spinach until wilted, then remove from heat.
  4. In a mixing bowl, blend cream cheese, Parmesan cheese, and nutmeg with the cooked vegetables until well combined. Season with salt and pepper.
  5. Scrape out spaghetti strands from roasted squash and mix with the filling.
  6. Spoon mixture back into squash halves, top with mozzarella cheese, and bake for an additional 10-15 minutes until cheese is melted.
  7. Let cool slightly before serving warm.
