  • 1/2 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Cook the rigatoni in a large pot of boiling salted water until al dente. Reserve some pasta water and drain.
  2. In a skillet over medium heat, melt butter and sauté the diced onion and optional red pepper flakes for about 5-7 minutes. Add minced garlic and cook for an additional minute.
  3. Stir in the pumpkin puree and sauté briefly before adding heavy cream. Whisk until well combined, then mix in salt, pepper, sage, nutmeg, and brown sugar; let simmer for about 2-3 minutes.
  4. Incorporate freshly grated parmesan cheese until melted, then toss in the cooked rigatoni until coated with the sauce.
