  • 2 small sweet potatoes
  • 1 small onion, diced
  • 200g mushrooms, sliced
  • 2 garlic cloves, crushed
  • 60g spinach
  • 1 heaped tbsp tahini
  • 1 tsp nutritional yeast
  • Juice of ½ small lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash sweet potatoes and poke holes in them with a fork. Roast on a baking tray for about 40 minutes until tender.
  3. In a frying pan over medium heat, sauté onion in water or vegetable broth until translucent. Add mushrooms and garlic; cook until mushrooms are tender. Stir in spinach until wilted.
  4. Remove from heat and mix in tahini, nutritional yeast, lemon juice, salt, pepper, and optional cayenne pepper.
  5. Let sweet potatoes cool slightly before cutting lengthwise and fluffing the insides with a fork. Fill generously with the mushroom-spinach mixture.
