  • 1/2 teaspoon salt

  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken and cook until browned (5-7 minutes).
  3. Remove chicken; sauté onions for 3-4 minutes, add garlic and cook for an additional minute.
  4. Return chicken to the pot; stir in chicken broth.
  5. Mix in heavy cream and whole milk until combined.
  6. Season with basil, oregano, salt, pepper, and optional red pepper flakes.
  7. Bring to a simmer for about 10-15 minutes.
  8. Stir in Parmesan until melted; then add mozzarella until fully incorporated.
  9. Mix in spinach, carrots, and celery; cook until vegetables are tender (5-7 minutes).
