  • 1 cup diced potatoes
  • 1 teaspoon smoked paprika

  • ½ teaspoon ground cumin

  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked.
  2. Add the diced onion and minced garlic, sautéing for about 3–4 minutes until fragrant.
  3. Stir in beef broth, diced tomatoes (with juice), corn, black beans, potatoes, smoked paprika, chili powder, ground cumin, salt, and pepper.
  4. Bring to a gentle boil; reduce heat to low and simmer uncovered for about 20 minutes until potatoes are tender.
  5. Mix in heavy cream or half-and-half along with shredded cheddar cheese; simmer for an additional 5 minutes.
