  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the penne pasta in salted boiling water according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook for about 6–7 minutes until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook until fragrant, about one minute. Stir in Cajun seasoning, smoked paprika, salt, and pepper. Add heavy cream and chicken broth; simmer for 4–5 minutes until slightly thickened.
  4. Stir in grated Parmesan cheese until melted and smooth. Return the cooked chicken and drained penne to the skillet, tossing until fully coated in the sauce.
  5. Garnish with fresh parsley before serving.
