  • lbs boneless, skinless chicken breasts, cut into bite-sized chunks
  • 12 oz fettuccine pasta
  • 1½ cups heavy cream
  • 4 oz cream cheese, softened
  • 1 cup grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Boil fettuccine in salted water until al dente. Drain and set aside, reserving ½ cup pasta water.
  2. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 5–6 minutes, flipping to brown all sides. Add butter and minced garlic; toss to coat, then remove from heat and set aside.
  3. In a clean skillet, melt butter over medium heat. Stir in cream cheese until smooth. Slowly pour in heavy cream while whisking. Add Parmesan, mozzarella, garlic powder, salt, and pepper. Stir until cheese is melted and sauce is thick and velvety. Use a bit of reserved pasta water to thin if needed.
  4. Toss cooked fettuccine in the Alfredo sauce until coated. Plate and top with warm Cajun chicken bites.
  5. Sprinkle with chopped parsley and extra Parmesan for a finishing touch.
