  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt (optional)
  • 4 ounces softened cream cheese (lite optional)
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat oven to 350°F and prepare a loaf pan.
  2. In a large bowl, mix egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and nutmeg until well combined.
  3. Fold in flour, baking powder, baking soda, and optional salt until just mixed.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, whisk together cream cheese, sugar, and flour until smooth.
  6. Spread cream cheese mixture over pumpkin batter evenly.
  7. Top with remaining pumpkin batter; smooth carefully.
  8. Bake for about 48 minutes until golden brown and a toothpick comes out clean.
  9. Let cool in the pan for about 15 minutes before transferring to a wire rack.
