  • 1 7oz can of chipotle peppers in adobo sauce
  • 1/4 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 8 cloves garlic
  • 1 bunch cilantro
  • ½ juice of lime
  • Lean steak of choice (beef, chicken, turkey, or lamb)

Instructions

  1. In a blender, combine chipotle peppers, olive oil, apple cider vinegar, honey, lime juice, cilantro, garlic, cumin, chili powder, and salt. Blend until smooth.
  2. Place your chosen steak in a large bowl and coat it well with the marinade (reserve 1/4 cup for later). Marinate for at least 30 minutes or overnight for more flavor.
  3. Heat a skillet over high heat with oil. Remove excess marinade from the steak and sear for about 3-4 minutes per side until browned.
  4. Let the steak rest for a few minutes before slicing thinly against the grain.
  5. Sauté cubed steak in the same skillet with reserved marinade on high heat for about 20-30 seconds to warm through.
