  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • 8 Tbsp unsalted butter (cold and softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for icing)
  • 1 1/4 cup all purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg yolk
  • 2 Tbsp unsalted butter, melted
  • 3 Tbsp heavy cream or milk

Instructions

  1. Preheat oven to 400°F (200°C) and line baking sheets with parchment paper.
  2. In a bowl, mix flour, brown sugar, cinnamon, and salt for the streusel. Add softened butter until crumbles form; refrigerate.
  3. In a separate bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Cream cold cubed butter with sugars until smooth. Mix in egg and vanilla.
  5. Gradually incorporate dry ingredients until just combined.
  6. Form dough balls on baking sheets; create indents for the filling.
  7. Fill each indent with streusel mixture.
  8. Bake for 8-11 minutes until edges are golden. Cool slightly before drizzling icing on top.
