  • 1 cup breadcrumbs
  • ½ cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup ketchup
  • ⅓ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup (¼ cup), salt, and pepper until just mixed.
  3. Shape the mixture into a loaf in the prepared pan.
  4. In a small bowl, mix together glaze ingredients: ketchup (⅓ cup), brown sugar, apple cider vinegar, and Dijon mustard. Spread half over the meatloaf.
  5. Bake for 45 minutes; spread remaining glaze on top and bake for another 15 minutes.
  6. Let rest for 10 minutes before slicing.
