  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup pure canned pumpkin
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 to 3 tablespoons cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease mini loaf pans and line with parchment paper.
  2. In a bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
  3. Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet ingredients; mix until just combined.
  4. Pour batter into prepared pans and sprinkle cinnamon sugar on top. Gently swirl with a toothpick.
  5. Bake for 28-30 minutes for mini loaves or 20-23 minutes in a brownie pan until a toothpick comes out mostly clean. Cool before serving.
