  • 1/2 cup melted unsalted brown butter
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup apple cider reduction
  • 4 oz cream cheese, at room temperature
  • 1 cup unsalted brown butter, softened
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp apple cider reduction
  • Apple slices
  • Cinnamon sticks

Instructions

  1. Prepare the apple mixture by simmering apple cider and diced apples in a saucepan until tender. Stir in light brown sugar and ground cinnamon; set aside.
  2. Preheat oven to 350°F (175°C). Whisk melted brown butter, granulated sugar, and light brown sugar together until smooth. Add eggs one at a time, followed by vanilla extract.
  3. In another bowl, mix flour, baking powder, cinnamon, nutmeg, and salt. Gradually combine dry ingredients into the wet mixture; fold in cooled apple mixture.
  4. Fill cupcake liners two-thirds full with batter and bake for 25–30 minutes until a toothpick comes out clean. Cool on wire racks before frosting.
  5. For frosting, beat softened brown butter and cream cheese until creamy; gradually add powdered sugar along with cinnamon and vanilla extract.
