  • 1 lb boneless skinless chicken breast (or thighs)
  • 2 tablespoons turkey bacon drippings
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 cup half and half
  • 1 ½ lbs Yukon Gold potatoes (peeled and cubed)
  • 1 ½ cups cheddar cheese (shredded)
  • Seasonings: salt, pepper, hot sauce, Worcestershire sauce, dried parsley, rosemary, oregano, mustard powder, red pepper flakes

Instructions

  1. Cook turkey bacon in a large pot over low heat; set aside and reserve drippings.
  2. Sear seasoned chicken in the pot until golden brown; let rest before cutting into bite-sized pieces.
  3. Sauté onions, carrots, and celery in turkey bacon drippings until softened.
  4. Stir in garlic and seasonings; mix well.
  5. Add flour to the mixture and cook briefly.
  6. Gradually stir in chicken broth and half and half until smooth.
  7. Incorporate potato cubes and bring to a boil; reduce heat to simmer.
  8. Return seared chicken to the pot; cook until potatoes are fork-tender.
  9. Stir in cheddar cheese until melted; garnish with reserved turkey bacon.
