  • 1 lb rotini pasta
  • 1 lb boneless, skinless chicken breasts
  • 1 cup cucumber, quartered and sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¾ cup small mozzarella balls
  • 1¼ cups Italian dressing (homemade or store-bought)
  • ¼ cup apple cider vinegar
  • Fresh parsley for garnish

Instructions

  1. Cook rotini pasta in a large pot of salted water until al dente. Drain and cool.
  2. Grill chicken breasts seasoned with olive oil and Italian seasoning on medium-high heat for 6-7 minutes each side until cooked through. Slice into bite-sized pieces.
  3. In a mixing bowl, whisk together olive oil, apple cider vinegar, and other dressing ingredients.
  4. In a large bowl, combine cooled pasta with grilled chicken, cucumber, cherry tomatoes, red onion, mozzarella balls, and parsley. Pour dressing over and mix gently.
  5. Chill for at least 30 minutes before serving.
