  • 1/2 cup 2% milk
  • 1/2 cup canola oil
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 jars maraschino cherries
  • 1 cup powdered sugar
  • 1 tablespoon melted butter
  • 2 tablespoons maraschino cherry juice
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350ºF and prepare a 9"x5" loaf pan by greasing it.
  2. In a medium bowl, mix granulated sugar, milk, canola oil, egg, and almond extract until well combined.
  3. In another bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  4. Combine the wet and dry ingredients gently until just mixed; fold in coarsely chopped maraschino cherries.
  5. Pour the batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick comes out clean.
  6. Allow cooling before glazing with a mixture of powdered sugar, melted butter, reserved cherry juice, and almond extract.
