12 oz (340g) pasta (spaghetti, fettuccine, or penne)
2 large onions, thinly sliced
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon sugar (optional)
1/4 cup olive oil (for chili oil)
1 tablespoon chili flakes
1 garlic clove, minced
Fresh parsley (for garnish)
Instructions
Cook the pasta in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
In a skillet, heat olive oil and butter over medium-low heat. Add sliced onions with a pinch of salt and cook for 25-30 minutes until deep golden brown. Optionally add sugar for extra sweetness.
In another saucepan, combine olive oil, chili flakes, minced garlic, and optional spices over low heat until fragrant.
Mix caramelized onions into the drained pasta and toss with chili oil and reserved pasta water to achieve desired consistency. Season to taste.
Serve warm, garnished with chopped parsley or grated cheese if desired.
