  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Vegetable oil for frying

  • Extra Cajun seasoning for dusting

Instructions

  1. Boil the eggs in a saucepan covered with water. Bring to a boil, cover, and remove from heat. Let sit for 10-12 minutes before transferring to an ice bath.
  2. Peel the eggs and slice in half. Mash the yolks in a bowl, then mix in mayonnaise, mustard, Cajun seasoning, and lemon juice until smooth. Season to taste.
  3. Set up a dredging station with flour, beaten egg mixed with milk, and seasoned breadcrumbs.
  4. Dredge egg whites in flour, dip into egg wash, and coat in breadcrumbs.
  5. Heat vegetable oil in a skillet and fry each stuffed egg white until golden brown. Drain on paper towels.
