  • 1 pound uncooked chicken (peeled, deveined, tails removed)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (divided)
  • 2 bell peppers (diced)
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 3/4 cup heavy cream
  • 12 ounces bowtie pasta
  • 1 tablespoon paprika
  • 1/2 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cayenne
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 3 tablespoons flat leaf parsley (chopped + more for serving)

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a small bowl, combine spices for the Cajun seasoning. Mix chicken with olive oil and seasoning.
  3. In a Dutch oven or skillet over medium heat, melt half the butter and cook the chicken until they are opaque; remove from pan.
  4. Sauté bell peppers and onions in the remaining butter until softened. Add minced garlic, then pour in heavy cream and parsley.
  5. Return chicken to the skillet and add drained pasta. Stir well to combine and adjust with reserved pasta water as needed.
