  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 4 cloves garlic (minced)
  • 2 cups red apple vinegar (or beef broth)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Season short ribs with salt and pepper and brown them on all sides, about 3-4 minutes per side. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened (5-7 minutes). Add garlic and cook for an additional minute.
  4. Stir in red apple vinegar to deglaze the pot, scraping up browned bits. Add beef broth, tomato paste, thyme, and bay leaves; bring to a simmer.
  5. Return short ribs to the pot, cover with a lid, and braise in the oven for about 3 hours or until tender.
  6. Remove ribs from pot, strain sauce if desired, serve drizzled with sauce and garnish with parsley.
