  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 1/2 cup vegetable or canola oil
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp white vinegar
  • 1 tsp red gel food coloring
  • 1 1/2 cups unsalted butter, room temperature
  • 1 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste
  • 1 tsp fine salt
  • 7 cups powdered sugar
  • 3 Tbsp heavy whipping cream, room temperature
  • 1/2 cup seedless raspberry jam
  • 3 Tbsp water

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one by one, followed by buttermilk, oil, vanilla extract, vinegar, and food coloring; mix until combined.
  4. Gradually incorporate dry ingredients into wet mixture without overmixing.
  5. Pour batter into prepared pans and bake for about 27 minutes or until a toothpick comes out clean. Let cool before transferring to a rack.
  6. Prepare the buttercream by beating butter and cream cheese together with powdered sugar until smooth. Adjust consistency with heavy cream if necessary.
  7. Assemble the cake by layering with raspberry jam and frosting between layers and over the top.
