  • 2 boxes refrigerated pie crust (14.1 oz each)
  • 1 can blueberry pie filling (21 oz)
  • 1 lemon (zested)
  • 1 egg (separated)
  • 2 1/2 cups powdered sugar
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 425°F. Allow the pie crusts to come to room temperature.
  2. In a bowl, mix blueberry pie filling with lemon zest and set aside.
  3. Roll out the pie crusts and cut out six circles from each using a biscuit cutter.
  4. Place a tablespoon of filling on each circle, brush edges with egg yolk, fold over, and seal tightly.
  5. Brush beaten egg white over tops before placing on a parchment-lined baking sheet.
  6. Bake for about 15 minutes until golden brown.
  7. For the glaze, whisk together powdered sugar and lemon juice until smooth; coat warm pies in glaze.
