  • 150g softened unsalted butter
  • 150g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 85ml buttermilk
  • 165g self-raising flour
  • 1.5 tbsp cocoa powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp red food coloring
  • 200g strawberry or raspberry jam
  • For Buttercream: 200g softened unsalted butter
  • 400g icing sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • Pink food coloring

Instructions

  1. Preheat the oven to 160°C (fan)/180°C/350°F/Gas Mark 4 and line a cupcake tin with black cupcake cases.
  2. In a bowl, whisk together softened butter and caster sugar until fluffy, using an electric mixer.
  3. Mix in eggs one at a time along with vanilla extract until fully combined.
  4. Add buttermilk, cocoa powder, bicarbonate of soda, red food coloring, and self-raising flour; mix until combined without overmixing.
  5. Divide batter among cupcake cases and bake for 20–25 minutes until a skewer comes out clean. Cool on a rack.
  6. Once cooled, core the cupcakes and fill with your choice of jam.
  7. Prepare buttercream by mixing softened butter first, then gradually adding icing sugar, milk, vanilla extract, and pink food coloring until smooth.
  8. Pipe the buttercream onto each cupcake to create the brain effect.
