  • 1/4 cup butter (at room temperature)
  • 1 cup + 2 tablespoons sugar
  • 3 eggs (at room temperature)
  • 1/2 teaspoon almond extract
  • 1 1/2 cups cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup + 2 tablespoons buttermilk
  • 2/3 cup sliced almonds
  • 1/4 cup butter (melted)
  • 1/3 cup light brown sugar
  • 1 pint fresh blackberries

Instructions

  1. Preheat your oven to 350°F and prepare a 10-inch skillet with nonstick spray or grease and flour.
  2. In a mixing bowl, cream the butter until smooth, then beat in sugar until fluffy.
  3. Add eggs and almond extract, mixing until combined.
  4. Gradually blend in half of the cake flour with baking powder and salt; stir in half of the buttermilk. Alternate adding remaining flour and buttermilk until just combined, then fold in sliced almonds.
  5. Pour melted butter into the skillet, mix in brown sugar evenly, and arrange blackberries on top. Spread batter over blackberries.
  6. Bake for about 40 to 45 minutes until golden brown; test with a toothpick to ensure doneness.
  7. Cool for about 10 minutes before flipping onto a serving plate.
