  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions (sliced thin and evenly)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Salted Butter (or non-dairy butter if preferred)
  • 3/4 Cup Half & Half or Full-Fat Coconut Milk or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (or dairy-free alternative)
  • 1 Bunch Chives (thinly chopped)
  • 2 Sprigs Fresh Thyme (stems removed)
  • 3 Leaves Fresh Sage (chopped)

Instructions

  1. Slice the onions thinly and caramelize them in olive oil over medium heat for 40-50 minutes until golden brown.
  2. Chop the Yukon Gold potatoes into small pieces. Boil in salted water for about 20 minutes until fork-tender.
  3. Drain the potatoes and mash them until smooth. Mix in butter, kosher salt, and half & half (or coconut milk).
  4. Stir in half of the caramelized onions and grated Parmesan cheese until well combined.
  5. Serve topped with remaining onions and fresh herbs.
