  • 1 pound (454 grams) ground sirloin or lean/extra-lean ground beef
  • 1 tablespoon dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 1 large egg
  • 1/3 cup Panko
  • 1 tablespoon dried basil
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 large garlic clove, minced
  • 2/3 cup barbecue sauce
  • 3 tablespoons water
  • 4 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 bunch of broccoli, cut into medium florets
  • 4 tablespoons extra-virgin olive oil, divided
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • Juice of 1 lime
  • 1 garlic clove, minced
  • 1/2 teaspoon sea salt
  • Big handful of fresh herbs (I used a combination of basil and dill)
  • 4 cups cooked quinoa or brown rice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine the ground beef, dijon mustard, balsamic vinegar, sea salt, pepper, egg, Panko breadcrumbs, dried basil, smoked paprika, oregano, and minced garlic. Mix by hand until well combined. Roll into 16 balls and place them on a plate.
  3. Heat two teaspoons of olive oil in a large oven-safe skillet over medium heat. Add meatballs to the skillet. Brown them on all sides for about 3–4 minutes.
  4. Transfer the skillet with meatballs into the preheated oven. Bake for 15 minutes.
  5. Place diced sweet potatoes on one baking sheet and broccoli on another. Drizzle sweet potatoes with 2 tablespoons of olive oil; season with salt and pepper. Toss to coat evenly. Repeat with broccoli. Roast sweet potatoes for 25-30 minutes until tender; roast broccoli for about 20 minutes until slightly crispy.
  6. In a bowl, combine barbecue sauce with water. Whisk until mixed well. Once meatballs are out of the oven, pour barbecue sauce over meatballs in the skillet. Heat over medium until sauce is hot and slightly thickened around meatballs.
  7. In a food processor, combine avocado, Greek yogurt, lime juice, minced garlic, sea salt, and fresh herbs. Process until smooth.
  8. To serve, divide cooked quinoa or brown rice among bowls. Top each bowl with roasted sweet potatoes, broccoli, barbecue meatballs, and drizzle generously with avocado goddess sauce.
