  • 1/2 cup light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together the butter, granulated sugar, and brown sugar until fluffy (about 3 minutes).
  3. Add eggs one at a time, mixing well after each addition followed by the vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, spices, and salt.
  5. Gradually add dry ingredients and apple cider to the butter mixture, alternating between them.
  6. Gently fold in the grated apples.
  7. Transfer the batter to the prepared loaf pan and bake for 55 to 60 minutes or until a toothpick comes out clean.
  8. Let cool for about 15 minutes before transferring to a wire rack.
