  • 4 large apples (2 Honeycrisp & 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in 3 tbsp water)
  • 5 tbsp butter (for streusel, partially melted)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (for streusel)
  • 1/2 tsp ground cinnamon (for streusel)
  • 1/4 cup melted butter (for icing)
  • 1 cup powdered sugar (for icing)
  • 2 tbsp milk (for icing)
  • 1/2 tsp vanilla (for icing)

Instructions

  1. Preheat your oven to 400°F and grease a muffin tin with softened butter.
  2. Peel and slice the apples into small pieces. Mix them with brown sugar, cinnamon, lemon juice, melted butter, and dissolved cornstarch. Heat this mixture until slightly thickened.
  3. Press each cinnamon roll into the muffin cups and fill them with the apple mixture.
  4. Combine streusel ingredients until crumbly; sprinkle it over each filled roll.
  5. Bake for about 15 minutes, covering loosely with foil for even baking.
  6. Whisk together icing ingredients until smooth and drizzle over cooled rolls before serving.
