  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 300 g granulated sugar (divided)
  • 1 tsp salt
  • 4 egg yolks
  • 600 ml milk (whole or plant-based)
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat oven to 180°C (350°F). Peel, core, and thinly slice the apples. Mix with 150 g sugar and salt; let sit for 10 minutes.
  2. Transfer apples to a baking dish and bake for about 30 minutes until tender.
  3. In a saucepan, combine 50 g sugar, cornstarch, and salt over medium heat. Whisk in milk until smooth; cook until thickened. Remove from heat and stir in egg yolks and vanilla.
  4. Layer half of the baked apples in a serving dish, pour half of the custard over them, then repeat.
  5. Chill for at least one hour before serving.
