  • 350 g Lotus Biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • Ground cinnamon
  • Ground ginger
  • Ground nutmeg

Instructions

  1. Preheat oven to 180°C (350°F). Crush Biscoff cookies and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Prepare the streusel by combining melted butter, flour, brown sugar, and oats until crumbly. Set aside.
  3. Toss sliced apples with brown sugar, cinnamon, and cornstarch.
  4. Beat cream cheese until smooth; gradually add sugar and mix in Greek yogurt, spices, and eggs.
  5. Layer half the cheesecake mixture over the crust; add spiced apples, then top with remaining cheesecake batter and finish with streusel.
  6. Bake for about 75 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least four hours.
