  • ½ cup unsalted butter, softened
  • ½ cup sugar
  • ¼ cup light brown sugar, gently packed
  • 1 large egg
  • 1/8 teaspoon salt
  • 1½ cups all-purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • 2 tablespoons sugar
  • ¾ teaspoon nutmeg
  • ½ teaspoon allspice
  • ¾ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, sugar, and brown sugar until light and fluffy. Add egg and mix well, then stir in apple cider.
  3. In another bowl, whisk together flour, cream of tartar, baking soda, salt, nutmeg, allspice, and cinnamon.
  4. Gradually combine dry ingredients with wet mixture until just combined.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet; space them apart as they will spread while baking.
  6. Mix additional sugar and cinnamon in a small bowl; sprinkle this on each cookie before baking.
  7. Bake for 12–15 minutes or until edges are golden brown. Cool on the baking sheet for five minutes before transferring to a wire rack.
