  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch square baking dish with butter and parchment paper.
  2. In a large sauté pan, boil apple cider until reduced by half (about 5 minutes). Whisk in cold butter until melted.
  3. In a medium bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Slowly incorporate the reduced cider into the wet mixture before folding in flour until just combined.
  5. Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown.
  6. Cool slightly on a rack before brushing melted butter on top and sprinkling with cinnamon sugar.
