  • 1¼ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Reduce apple cider in a saucepan until concentrated (about ¼ cup), then cool.
  2. Brown the unsalted butter over low heat until nutty, then cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, cornstarch, spices, and salt.
  4. In another bowl, combine cooled brown butter with sugars and mix in the egg, reduced cider, and vanilla.
  5. Gradually fold dry ingredients into wet until just combined. Chill dough for 30 minutes.
  6. Preheat oven to 375°F (190°C). Scoop dough onto lined baking sheets and bake for 9-11 minutes until set at edges.
  7. Cool slightly before brushing with apple cider butter and rolling in cinnamon sugar.
