  • 1 lb ground chicken
  • 1 egg
  • 1/2 yellow onion, diced
  • 1/2 Granny Smith apple, peeled and diced
  • 2 oz cheddar cheese, grated
  • 1/2 cup fine breadcrumbs
  • 2 large sweet potatoes
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 inch piece of ginger, grated
  • 1 teaspoon soy sauce
  • 1 teaspoon salt
  • Freshly cracked black pepper to taste
  • Cayenne to taste
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and place them on a baking sheet.
  2. Bake sweet potatoes for about 60-75 minutes until tender.
  3. In a sauté pan, heat olive oil over medium heat. Sauté diced onion and apple until softened. Set aside to cool.
  4. In a mixing bowl, combine ground chicken, egg, breadcrumbs, cheese, parsley, walnuts, ginger, salt, pepper, and the cooled onion/apple mixture.
  5. Shape mixture into approximately 2-inch meatballs and place on a greased baking sheet.
  6. Bake for about 15 minutes until cooked through (internal temperature should reach 165°F).
  7. Once sweet potatoes are baked, peel and mash with butter, maple syrup, and spices.
