  • 3 boneless, skinless chicken breasts
  • 23 medium zucchini
  • 23 medium yellow squash
  • 12 oz white button mushrooms
  • 3 tbsp minced garlic
  • 1/3 cup olive oil
  • 2 tbsp olive oil (reserved)
  • 1/41/3 cup soy sauce
  • 1 1/2 tbsp rice apple vinegar
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • salt & pepper (to taste)

Instructions

  1. Trim and cut chicken into bite-sized pieces.
  2. Slice zucchini and yellow squash; quarter mushrooms.
  3. In a mixing bowl, combine chicken and vegetables with olive oil, soy sauce, garlic, rice apple vinegar, sesame oil, salt, pepper, and garlic powder.
  4. Preheat air fryer to 375°F (190°C). Place the mixture in the air fryer basket in an even layer.
  5. Drizzle with additional olive oil and cook for 15 minutes or until chicken is cooked through.
