- 3 boneless, skinless chicken breasts
- 2–3 medium zucchini
- 2–3 medium yellow squash
- 12 oz white button mushrooms
- 3 tbsp minced garlic
- 1/3 cup olive oil
- 2 tbsp olive oil (reserved)
- 1/4–1/3 cup soy sauce
- 1 1/2 tbsp rice apple vinegar
- 1 tbsp sesame oil
- 1 tsp garlic powder
- salt & pepper (to taste)
- Trim and cut chicken into bite-sized pieces.
- Slice zucchini and yellow squash; quarter mushrooms.
- In a mixing bowl, combine chicken and vegetables with olive oil, soy sauce, garlic, rice apple vinegar, sesame oil, salt, pepper, and garlic powder.
- Preheat air fryer to 375°F (190°C). Place the mixture in the air fryer basket in an even layer.
- Drizzle with additional olive oil and cook for 15 minutes or until chicken is cooked through.
